Like the sunflower, the Jerusalem artichoke (Helianthus tuberosus L.) belongs to the Asteraceae family. The plant is quite hardy and easy to grow everywhere. Its tubers are highly interesting from a nutritional standpoint. With a slightly sweet taste, they can be reminiscent of artichoke or salsify. What makes them unique is their high content of inulin, a soluble dietary fiber. To create our powder, the Jerusalem artichoke tubers are harvested and immediately subjected to gentle drying, then ground.

Directions for use: Beige to light brown in color, the powder has a slightly sweet, nutty taste. It is suitable for, among other things, pastries, porridge, muesli, pancakes, soups, sauces, milkshakes, and smoothies.
